Arleux, in the north of France, is famous for its festival of Smoked Garlic which is held every first weekend of September. Festivities include garlic braiding competitions, Parade of Giants, flea markets, street entertainment and over 5,000 Litres of its signature dish of Smoked Garlic soup is made and consumed over the three days.
Decorate with a few sprigs of chervil (substitute with fresh parsley or tarragon or a combination of the two). Serve with croutons and grated gruyere.
